Royal Icing For Outlining
Ingredients:
3 large egg whites
1 pound powdered sugar
1/2 teaspoon pure vanilla extract
Using a stand mixer fitted with the paddle attachment, beat egg whites on medium speed until soft peaks form, about 2 1/2 minutes. Sift powdered sugar into mixing bowl and add vanilla. Beat on low speed until well blended. Using a rubber scraper scrape sides of bowl. Beat royal icing mixture on medium-high speed for 5 minutes until icing can hold its shape. Mix longer if needed. Cover immediately to keep from drying out. Use immediately or refrigerate for up to 2 days.
If using a hand mixer, check egg whites for soft peaks after 2 minutes. And check for royal icing's ability to hold its shape after 4 minutes.
