Begin with 1 batch of Royal Icing For Outlining. Place royal icing in the bowl of a stand mixer or in a large bowl suitable for mixing if using a hand mixer. Begin mixing on lowest speed (typically called "stir" speed or "1" on speed settings 1 to 10).
Add egg whites one at a time, allowing white to be fully mixed into the icing. Test icing between each addition of white to check for desired consistency - when knife cuts through the icing, icing should come back together within 5 to 10 seconds.
Royal Icing For Flooding is perfect when after the knife is cut through the surface, the cutting line disappears between 5 and 10 seconds.
